Mini Strawberry Cream Cake

Mini Strawberry Cream Cake Recipe




  • For Sponge Cake

2 cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
¾ cup unsalted butter, room temperature
1 cup granulated sugar
1 egg
1 egg white
1 cup buttermilk
1 tsp vanilla extract

  • For Whipped Cream

1 cup heavy whipping cream
1 tbsp sugar
½ tsp vanilla extract

1-2 cups of strawberry, cut in half

  • For Sponge Cake

1. Line two 6-inch round cake pans with parchment paper and grease & flour the side of the pans.

2. Sift together flour, baking powder, baking soda, and salt. Set aside until needed.

3. Cream together butter and sugar in a medium size bowl with hand mixer until creamy and smooth for about 1-2 minutes.

4. Next add in egg and egg white and mix until just combined. When everything is incorporated, add in dry ingredients, mix well and make sure to scrape the side of the bowl.

5. Last, pour in buttermilk and vanilla extract, mix until well-combined. The batter will be thick.

6. Pour in 2 cake pans about 3/4th full.

7. Set the steam oven to 350°F using ‘Bake’ feature. Bake cake in the oven for 30-32 minutes or until toothpick inserted come out clean. Cool for 10 minutes on a wire rack then remove cake from the pans. While the cake is baking, cut strawberries in half and make the whipped cream.

  • For Whipped Cream

1. Whip the heavy whipping cream until stiff peaks are just about to form, add in vanilla extract and sugar until stiff peaks. Do not overmix to avoid cream become butter-like.

  • To assemble the cake

1. Remove the domes from the top of the cake using serrated knife or a cake leveler. Place one layer of cake to the serving plate/dish, arrange strawberries on top of the cake (as seen on the picture above), spread whipped cream all over the top using offset spatula, try to make it even.

2. Top with the second layer of cake and spread whipped cream over the top layer cake and garnish with some strawberries.

1. Wait until cake is completely cool before frosting.

2. You can add more sugar to the whipped cream if preferred.
